I have this fiesta for a year now, and I am trying to achieve the best mpg possible. I have had maxed out all areas of the ecomode petal system (quite easy to do, I've never got less than 4.5) but can't seem to go beyond 51mpg while driving safely with existing traffic conditions. Ford claims I could get 65mpg, but I've yet to reach that.

Have other owners got in the high 50's or the claimed mpg?

Okay....

simple quick fix here - fit a boost guage.

Mates wife got an eco boost and same was winging that she could not reach the claimed consumption - fitting a boost guage was a good way to give her indication when the engine was drinking, tended to like a bit of juice when it was boosting. so guage fitted, and took her out and showed her how to drive with anticipation and out of the boost.

She went away happy, spent a few weeks driving like that and she was getting some really impressive figures. 62 if i remember.

But she did complain that it was as slow as a week in the jail.

Unfortunately the Ford figures (not just Ford, it was the system up until recently) aren't really compatible with normal driving. Proper eco driving is a chore, but doing so could achieve figures close to the quoted figures, but you'll probably either die of boredom or be involved in a nasty incident. The green petals are a gimmick. If you really want to hit the sweet spot, choose a dual carriageway or motorway & stay at 56 mph for as long as possible in fifth: that's the old cruising sweet spot. Prepare to be sworn at by truck drivers though...
