Route 66 advice and opinions

Hi,
Sorry in advance if this Is a re-post as I'm sure it probably is.
My OH and I are planning in doing the route 66 trip. My only real requirements are a traditional American v8, and possibly a detour to Vegas towards the end.
We are allowing ourselves around three weeks, within which to cover the distance.
My question basically is, from your point of view, what is worth stopping to do/see, and what's best skipped past?
From reading another thread I gather Hertz are pretty sound for car rental. Any other opinions would be great.

I did Route 66 a few years ago with a friend and the places I remember best are the wild donkeys in the street at Oatman, Arizona and Gallup which is the native american capital. Stopping to see the Cadillacs half buried and also going up the St Louis arch. Also visiting the Oklahoma bombing memorial.
I only accidentally found a bit of 66 when heading east to the Canyon from Vegas, but I understand it's been mostly superceded by an interstate. So you have to map out the original route rather than blindly following the 66 signs as that'll just take you on a crosscountry 4 lane motorway.
