Another Toronto thread...

Mrs Dibble and I are back off to Toronto for a couple of weeks in September/October (Mrs Dibble used to live there and we're actually staying in her old house with her old housemate). We've got a few things planned such as Niagara on the Lake (not Niagara Falls...), wine tour, stay in friend's cottage in the sticks for a couple of nights, Peterborough canoe museum (/nerd) and the Distillery District.
Despite all this, it's more than ten years since Mrs Dibble moved to the UK and her housemate isn't a big one for bars/restaurants or sightseeing. What would the great PH collective recommend in and around Toronto (I'm hoping to watch a hockey game if the season's started). Any recommendations for decent bars and restaurants, both downtown and out towards Mississauga/Clarkson/Oakville. I'm also after recommendations for a wine tour and anything in or near Niagara on the Lake.
What are the "Must see" museums/galleries? We've done the McMichael and Black Creek Pioneer village, and we'll be doing those again. Anything transport/air and space related? It looks like the Canadian Air and Space museum has closed down... We've got the use of a car while we're there, so driving to places isn't a problem. The car's a 1988 Chevrolet Celebrity so we'll at least look like locals!
Thanks in advance.

The Big Chute Marine Railway is worth a look, couple of hours out of Toronto IIRC.
Joe Kools is a great restaurant, opposite direction though in London
