You're probably right about the gasket - I've covered quite a lot of miles since I bought the car and whilst the overheating problem has always been present, there has been no other changes in the cars characteristics.
The fan I fitted was a genuine 400SE fan from HHC (with cowl) so I guess it's up to the job (spins the right way too - I checked
).
I may go and get one of those testing kits from Frosts. (I know Mike the owner, They're only down the road from me, I desiged the labels for some of their products.)
Well you guys have given me a fair old bit of homework to do. But it goes to prove that there's nothing that can't be fixed
(you've just got to know where to hit it!)

have you considered getting a kenlowe adjustable temp sensor, are available at
www.rimmerbros.co.uk/
in the V8 engine section, has a dial to adjust what temp the fans come on at and powers direct to the fans so no relays. Also has a conector to fit an overide switch.
You can also get a 74c thermostat as well.
Might be worth flushing out the cooling system while you are at it if you haven't done so already.

Mine is OK driving along, evan at 30. Stop in traffic an gets hot very quickly. Fitted £8's worth of wiring and switch and lucar's all is now OK. Followed advice from engine re builder and bible and fitted an overide. If I think I am going to get stuck in traffic I turn the fan on and it controls it up to a point, bottom tip of 90 on the gauge after 1/2 hr in a jam on the M5.
