Can anyone recommend a company/person to retrim a couple of sets of cars seats near Glasgow or even further west?

What exactly do you mean by re-trim? Redoing seats with original coverings? Or repairing existing seats?
There is a guy near me in Motherwell who does a lot of business with taxi seat coverings but not sure if it’s just fitted seat covers as opposed to the actual original seats?

I need a pair of front seats for a 205 GTI fully re-trimmed or reupholstered. Under of the correct terminology. So new covers made from scratch and fitted to the seats. And the other job is the seat centres on leather 911 seats replaced with fabric rather than leather.

Baillies in Paisley look decent from the pictures on their facebook page - do exactly the kind of work you are asking for.

A guy local to me in Inverclyde repaired my last 911's bolster and did a fantastic job of it - he also does this kind of work (anything upholstery, not just cars) and is very friendly with reasonable prices to boot - ART Upholstery

I used Marc at:

vintageretromotors.com based in the technology park at Hamilton. He has done 3 cars for me and I am happy with his work. Feel free to mention my name.

Ballies reupholstered seats and doorcards for my MX5 a couple of years ago in leather.

Great job and highly recommended for workmanship. & quality , they spent ages sourcing the correct colour seat piping to get it right.

However they were very busy and had to push them to get it booked in - you need to phone or drop in , they don't seem to be big on email.

ETA -they are in Linwood , close to J29 of M8

Samco Interiors, East Lothian did a great job on my Recaros, re trimming in alcantara and embroidering on the logo.

Another vote for Baillies here. I've used them to repipe and trim a set of Recaros and they did a fantastic job.
