Builders in Edinburgh

Does anyone have any contacts for a building firm who could assist in modifying a single storey garage to have a garage with two en-suites above it, and tie it to our house?

We have an architect on board who's going to start pulling some sketches together, but each of the builders we've spoken to come up with barmy ideas that seem to revolve around our address seemingly having endless funds that we'd like to give to them. That is, some sort of Edinburgh / Ravelston factor that gets added to any ideas we have. We have friends currently being put through the wringer by some builders so are wary of falling foul of the same.

Simply put, we want reinforced wall for garage, and two / three rooms above that will be en-suites (possibly plus a dressing room as the third room).
