Erm... on the roads?
If you want to see interesting cars, stand outside the Hilton hotel as there's often interesting metal coming and going.
Or how about Man Utd's training ground at Carrington?
I don't really understand what 'car spotting' is. Perhaps you could take the new car price list from the back of What Car magazine, and tick each one off when you see it.

Go straight down to Deansagte via Arndale Centre pedestrain area, walk down towards the Beetham Tower (Hilton Hotel), have a wander around the streets behind House of Fraser ( the multi story car par is worth a glance if it's lunchtime or later), maybe have a wander over the footbridge to the Lowry Hotel, go back along Deansgate towards the Hilton. When you get to the Hilton, it's worth a look in the car park opposite, as mentioned above. Next go under the Tram bridge and turn left. Go along this bit (Deansgate Locks) and turn left at the end. there is an Arbarth/Alfa dealerships with muscle cars next door. If you cross the road there and go up past the rear car park of the Bridgewater Hall*, around 300 yeards up is a small car park which sometimes has a couple of Brabus' or Astons in.
Next, go back to the Arbarth place and go under the bridge to it's right. This takes you back to the Hilton. Go back up Deansgate until you come to John Dalton Street, go up there and left at the top. Go 100 yeards and turn right up King Street. At the top in "Rosso" which is owned by Rio Ferdinand and potter around the surrounding streets there as there is ofetn something nice parked up, especially in the afternoon.
If you have time, it's worth going up Upper Brook Street (http://maps.google.co.uk/maps?hl=en&gl=uk&q=stratstone%20upper%20brook%20street&um=1&ie=UTF-8&sa=N&tab=wl), they have a few nice ferraris popping in and out and are generally ok if you want a look around. Maserati are there too.

Yep!Not seen it for while now but there used to be a matt white McClaren SLR parked up outside quite a lot.
