Great drives & places to stay

Hello folks.
An ex Tiv driver and now the proud owner of an air-cooled 911. I want to take her out on a proper blast!
I live in Grappenhall which is near Warrington, Cheshire. I'm fairly new to the area and I'm looking for some recommendations for great drives and stays. I'm looking at North Wales and the Lake district being the obvious choices.
Looking to go the weekend of the 23rd September, taking my wife and 3 year old son. Going for the weekend, looking for some great roads, scenery and somehwere very nice to stay (that will allow kids!). Somewhere that is non-corporate that has great food and a better wine list would be ideal!!
A cottage or similar is also a possibility.
Any suggestions?

EVO mag have used the Groes Inn before (may still do). www.groesinn.com/ I think it may fall way short of your expectations in the "great food and a better wine list" stakes though so probably not what you are looking for at all but location is good. EVO have also used the Royal Oak in Betws-y-Coed which is the perfect location for getting out onto the many superb roads in the area. Probably not the standard you are looking for but again, great location. May be worth a look http://hotel-snowdonia.co.uk/
I doubt either would be described as "very nice" places to stay but purely from a driving point of view are ok. Perfect for half-cut motoring journo's!

I'd drive over to Skipton (pretty boring road) then from Bolton Abbey head up to Hawes(fantastic road, stop for lunch, and possibly look round White Scar cavern then back to Ingleton. scoot over to Windermere and stay at the Lakside hotel at the bottom end of the lake(expensive, but nice and the other half will love the pool/beauty treatments etc). Gently make your way back to Warrington via Lancaster, Glasson dock, and avoiding the M6.
