I'm going to have a quick escape with the other half next week. We'll be staying away Wed and Thursday night.
I was thinking of going to Brighton and staying at Hotel du Vin.
Having not been to Brighton for at least 20 years, is it a good place to go for a couple of days to chill, do some lunching and have nice evening meals?

Ok there are far better qualified people to comment about Brighton but I'll say this.
Take a walk along the marina which is very nice if it's nice but most if not all of the eateries are chains so maybe not for you if you're trying to impress the missus but it's nice to grab a drink and watch the world go by.
The Laines is lovely and littered with bars, shops and fantastic little independent restaurants. On a warm day you see loads eating outside and it's like being abroad.
If you get chance have a walk along Sydney Street which is full of weird and wonderful shops. Even if it's not your thing it's worth walking along just to see how weird Brighton is.
Drink wise some of the bars along the seafront are quite nice and again the Laines is great. If I were you I'd stay away from West Street as it's full of drunken kids and is Brightons answer to Manchesters Deansgate.
Meal wise I'm not well up on this as I'm a tight arse northerner who won't spend more than £20, however I've heard The Coal Shed is very nice for fish and meat

There is a Jamie's Italian but I'd imagine there are better Italians in Brighton and I'm sure there will be some decent recommendations along shortly.

I'm already looking at that option, especially as the hotel has no parking and public car park is around £20/day.2.5 hours from Parkstone where I live on the train sounds a good plan at £29 return.

Leave the car in the Marina multi story (for free) and enjoy the walk back along the seafront. Just avoid the top level as you might find it in the middle of a car boot sale on Sunday 
Ooh tell me more. We're there Wednesday and Thursday so that sounds a plan. Free?
