Off road buggies/ experience days. Stag do ideas.

I have been set the task of organising a mates stag do and am after some recommendations. Done plenty of googling but would like to hear from people that have actually been on one of these days.
We like the idea of Off road racing buggies, something fast, like Rage buggies, and ideally in Cornwall but will consider other locations in the South West. Almost everyone going lives in Devon so want to keep it fairly local to help keep costs down and make it as accessible as possible for all invited.
Alternatively we are thinking proper off-roading in Land Rovers could also be fun .
Currently looking for a few hours driving and a few hours clay pigeon shooting to help break the day up.
Anyone know of somewhere good that would cater for a large group of 30 somethings and be a good day activity for a stag do?
