Can anyone recommend a good rolling road in the North East

I have just completed my kit car. It's an MK Indy and I'm using a Kawasaki ZZR1100 engine in it.
I have noticed it has a flat spot between 7,000 and 8,000 rpm. I think this is the point when it changes from the primary jets to the main jets. Otherwise it pulls strongly through the rev range.
I'd like to get it set up on a rolling road or by someone who understands bike engines. I'd usually use R & P Woods in Heaton, but the guy who does the rolling road is busy up until he goes on holiday for 2 weeks, so I can't book it in until mid December. I can get a Dynojet kit next day, but don't know how to fit it.
Jack Frost at Holeshot can do it next week, but it means driving to Bradford and back. Can anyone recommend anywhere more local?
