The thermostat is contained in a housing at the front of th engine. Be very very careful removing this casting as the bolts are very commonly corroed into the block and tend to screw off when undone. Fortunately they break at the head and allow you to remove them from the block with Monkey Pliers etc. The housing is on the front of the inlet manifold.
You probably could get a lower thermostat but that is not what turns the radiator fan on !
The radiator fan is controlled by the Otter switch located near the battery in the pipe that runs from the top right hand corner of the radiator into the swirl tank. If you haven't got the later type 'screw in type' then it is one way to upgrade to a lower temp setting. The Tower View stainless replacements come with the screw in type fitted into them.
