looks very good. CS manifolds will also glow when heated up enough.
Your shiny SS has a low emissivity coefficient (say 0.1). The old manifolds must have been brownish/blackish with a coefficient like 0.8.
They heat up internally about the same. So in order to radiate the same amount of heat away, the shiny manifolds heat up to a higher temperature.
Enjoy the view, once the SS becomes tarnished the emissitivity will increase, hence your manifolds will run cooler.
Which is good. since SS also happens to expand nearly double as much with temperature as CS (or the cast iron of the cylinder heads), I would keep the old manifolds around. There will be more stress compared with the CS situation, if it is too much I do not know.

PS looking some more, I see 4 ignition leads, I was thinking of my own V6.
The V8 may have an aluminium head? With a higher coeff of exp, hence SS may actually be a good match!

The only time I've ever seen a road car exhaust glow like that was on my old Mk2 Excort, but that was only because the distributor clamp bolt had come loose and the ignition timing was a mile out. Gave me quite a fright when I opened the bonnet at the side of the road to diagnose why the car was running like a sick dog.
I was lucky, all the mainfold bolts had been replaced with the ARP stainless bolts. Only took 40 mins to remove the old manifolds and a further 60mins to replace including the "Y2 piece" and exhaust. 
The glowing seems to have settled down now, shame the lovely shine is being replaced with a sort of bronze effect.
