Don't want completly entry level as I don't want to have to sell it in a year to get something I should have bought in the first place.
That's the correct approach. For 500 smackers I'd shop around and get the best Canon/Nikon you can (there aren't any 'bad' cameras really). Get along to a camera shop and get a feel of different cameras as there's quite a difference between models/brands.Good info here
Don't forget to budget for the inevitable Long Lens (200-350) and a decent bounce flash (70-300), tripod etc.
go to your local camera shop and handle everything in your price range , some camera's just wont feel right , dont reject a camera 'just' because its not a canon/nikon there are good camera's from other makers (pentax/sony/olympus)
look at used stuff as well there are bargains to be had , camera kit is generally well cared for and will always come with a good warranty
get used to the camera and how it works before looking at other lenses, flashguns etc etc walk before you run
