Lovely shots!

Always print with border so that when you frame the photograph you won't lose any of the picture area. Also worth bearing in mind the fact that you often lose some of the picture area in printing depending on the size of print relative to the picture dimensions.

You can always set the canvas size up in Photoshop and scale image accordingly.

With regards to a border, it all depends on how you are going to mount and frame the final print. If you choose a gloss metallic frame then that would negate the need for a border. if you are going to use a clip frame [shudder] then a black border will frame it nicely, so to speak.

If you're using a decent frame (i.e., not a clip frame), you'll probably have some sort of border/matte anyway, and I find it's easier to have the image overlapped by the border by a couple of mm on each side. If I print with a border on the paper too, it takes ages to make sure it's lined up perfectly and central, and also means the mount cutting has to be spot on too.

You need to leave a border so that you can tape the print to the mount. You would not want to get the wrong sort of adhesive anywhere near the image area.

You mean like masking tape? hehe

I should have mentioned - I do leave a 1cm(ish) border around the print to allow for mounting without damaging the image, but will usually cut the matte so it overlaps the image area by a couple of mm on each side so I don't have to spend ages making sure it's perfectly aligned. I also use Filmplast P90 tape, which is pH neutral and won't damage the print if you need to remove it.
