GoPro 11. Record everything in highest resolution (8k) video and extract stills direct from the Quik app - I tried using the photo mode but always found it a bit hit and miss - capturing on video then using the free app to extract the exact frames you want is a fantastic way to ensure you don't miss the shot.
These are a mix of shots from a couple of trips this year (edit - quality looks shocking due to thumbsnap compression, click through for a better look!)

We've got an Olympus Tough TG5 (son's camera / underwater holiday camera), and for a compact it's very capable. Has optical zoom and some ability to manually 'drive' it as well.
When we bought it (4 years ago?) it was class-leading, but now in all honestly smartphone cameras are arguably better, albeit definitely not waterproof (as I discovered on our last holiday... ).
Just had a quick look, and for the TG-7 vs the GoPro 11, it's a "what are your priorities" call - photo vs video, Mp vs optical zoom and better image stabilisation, etc...
