Video production - iPhone 13 or GoPro Hero7 White

Apologies in advance, but I have absolutely no knowledge on this subject matter.
In 2 weeks time I need to take lots of footage of my son skiing to enable us to produce circa 10 / 15 min video as evidence of his abilities for his GCSE in PE.
I have available to me a Go-Pro Hero7 White and an iPhone 13. Which would be the best tool to use both in terms of quality of the footage and ability to create a video after the fact?

And would a gimbal be a useful investment? I have managed to borrow one, but unfortunately it's for a GoPro 3, so my Hero 7 doesn't fit.

Can't help with those exact models but I'm looking to replace my iphone 8 and Hero 3 with the latest respectively.
There are a lot of comparison videos up that might help on YT. Perhaps try there?
I quite liked this one. It helped me. As a result, I likely won't bother with another gopro and spend the money on decent underwater protection to go with my upcoming 14 pro and a few other mounting tools.

For what you are trying to do, I'd probably punt on the gopro. It's what they were made for. Gimbal? Sorry no experience.

Cheers for the comments. I does feel like the iPhone would be better as I can actually see what I'm recording. I've found the GoPro quite fiddly in the past.
