Going narrowboating in the summer (assuming the apocalypse doesn't consume us again) and fancy clamping a GoPro (other action cameras available etc.) to the front for some time-lapse action.

That suggests I don't need the latest greatest - does £139 for a refurb Hero5 sound about right?

That’s the one we went for the start of this year, haven’t been able to use it for its intended use. However been playing round with it and it is really good.

At that price point it was the best to go for from all the reviews I read.

A refurb hero 5 will be perfect for time-lapse on a narrowboat.

Dont forget to think about power, as Gopro's do eat batteries, especially if you want to do a long time-lapse. But the hero 5 can be powered over it's USB C port, so get a large phone power bank, connect up to the GoPro and job done. And since the GoPro has its own little battery, you can 'hot swap' the power bank. I did a time-lapse for a cruise company years ago, and had many gopro's on the go looking out. I used several 20,000 mAh power banks from Anker powering them all day, and I'd swap them out halfway through the day as a precaution.

Just looking at that now.

Am I missing sometime, or is a brand new 7 from John Lewis at £179 not a better bet?

So I bought a 7 Silver. It seems fatally flawed in that there seems no way to connect it to power whilst it is in its case / tripod adapter.

There's an opening on the case but it's not actually possible to open the cover.

Or am I missing something?

Yes, the cover comes off. When it's open as in your first picture, twist it horizontally and it will pop out. It's just a push fit to reinstall.

Ah. Oh well, I’ve returned it and ordered an 8 Black with an extra battery now! Nil desperandum.
