As per the title really, are drones (DJI Mavic Pro) allowed at the Ring? Google didn't come up with any results...

According to this map drone flying is banned at the Ring. Well, more accurately it's prohibited airspace.

Nurburgring terms and conditions (link to PDF) say:

Parking and Temporary Camping Site Regulations said:
On the premises, starting, flyovers, landing of drones and similar objects is permitted only after prior consultation with and a special permit from the Nurburgring and the relevant authority. This provision applies to drones that require a licence as well as those that may be operated without one, and also to all other kinds of flying objects. Violations will be prosecuted.
