I've used various editing software over the years. My advice is to stick with something simple, even free, with an interface that you like when starting. This will be more than enough until you start to get serious.
Then, when you know what you want, look for those specific features in other software. I have two at the moment. I mainly use MoviePlus which is rather basic but both reliable and easy to use. Perhaps not intuitive though.
I also have PowerDirector. Lots and lots of goodies in that, with superb back up and free fades, titles and wipes. Lots online as well if things start to get confusing. People say it is not for the beginner but it's easy enough for the basics and only gets complicated when you want more complex effects and such.
There's a great choice of basic level, much of it free, and prosumer level video editing software, much of it reasonably priced. If you know what you want it will be great fun choosing but I'd stick with free/cheap to begin with.
There's lots and lots of video editing advice on YouTube, and for all levels. Try Vimeo as well.

I'd try and keep the editing on the S6. Transferring to the iPad can be a bit of a faff. I don't have any knowledge of Android apps however just as the other poster says, try some free ones and they should work fine.
If you wanted to go more advanced then you'd really want to move over to a PC/MAC.
AudioTechnica make some good lapel microphones. If you are recording in a noisy environment I suggest getting the mic as close to your mouth as possible, to improve the signal to noise ratio.
