iPad games

Any recommendations for a really engrossing game on the iPad? I've got a few fun games that are ok to pass a few minutes. Now I am looking for something that can stand the test of time a bit more. Something you might take on a Long haul flight and that you'll want to come back to.

Also, it needs to function when a away from a net connection, so needs to work without on line play or other social functions. Oh, and I've already got X-plane.

I'll check out real racing, but I think I'm looking for some a bit more cerebral (check me out!) rather than instant action. Maybe a strategy game or something.

I already have Harbour Master which I think is similar to Flight Control. It's good for short burst but not really "deep" enough, if you know what I mean.

Plants vs Zombies and Angry Birds are both excellent.
