Most realistic is Riding Spirits.

Very much like Gran Turismo, but with bikes.

Not as good to look at, but it does the job.

Have seen in PC World for a tenner.

I'd have to go for MotoGP3

Although ONLY if you put it on simulation mode, it's far too arcadey otherwise.

Moto GP3 got great reviews and is supposed to be the most realistic, only trouble is it's a bastard to get hold of in the shops so you'll have to eBay or Amazon it

I've got GP500 somewhere still. From what I can remember that was pretty good. Sure to be able to buy it on budget now.

Plus there are plenty of mods for it, Superbikes, Updated bikes too.

Did not realy find that an issue myself. It is a sod to get used to the handling, particularly in full sim mode when you have to control the rider (angle of lean, etc) as well as the bike.

I would say that the sensation of speed is OK, but without shed loads of motion blur, etc. Which I find unrealistic.
