Whats the fastest and easiest way to transfer data from my apple to my PS3 ?

Probably USB memory stick.

You could set up a media server on the Mac and then use the copy function to get your files onto the PS3. I used this approach to get all my music onto the PS3.

Failing that, a big USB stick and a bit of shoe leather would do the same job.
