the BMW Sauber team use Live for Speed as the sim for their public F1 simulator (probly helped by the fact that they have licensed thier F1 car and a Formula BMW single seater for use in the game)
For the cars and some of the single seaters you have to lift off to change gear (and if the Autoclutch is off then also operate the clutch as well - and cars will stall in a spin if you dont declutch.)
the Logitech G25 wheel will allow you to use 3 pedals, and a gear leaver or the flappy padels
(tho i dont know what its like to drive with the wheel - as i'm still using mouse controls with the autoclutch on.)

The most realistic (and unforgiving) is the GTR series. PC only, but you won't get that feeling in any other game.
In terms of GTR2, I don't have a proper set up and as such use a mouse and wheel, yet it feels fantastic! Thats even more impressive when you consider I have never won a race, and 99 out of 100 times I screw up and end the entire race a few laps in with a wrecked car ... so much fun

Are some games better suited/programmed for wheel/pedals? (I'm not interested in any kind of hand-held game, I want to experience something as similar as possible to actual driving).

That is a user addon track ... but the new GTR game, GTR Evolution is coming with the ring on it as standard.

Iracing iracing iracing! Best thing since sliced bread, it really is. If you want a good realistic game go for Forza2 or GT5 if it ever gets released.
If you cant get in, or cant afford it, then Live For Speed is the next best realism wise.

i have to say actually Live For Speed, with a decent wheel and gear stick is up there. The car handling and physics/damage are great, the racing is close, very little, if any lag at the start and during the race, the graphics are crisp and you feel connected to the car(particularly the single seaters). I tried my hand twin drifting the other day on a circuit and that was brilliant fun.
The demo is free still AFAIK so give it a try.
