So I drove a 2016 2.3 and enjoyed it but found some things I didn't like.

I must admit that I found the ride quite 'jiggly' at the front and also the throttle response a bit laggy.

Having scoured reviews very few talk about ride quality but did find a review stating that the 5.0 was more settled/heavier ride wise.

Also the throttle response of the 2.3 might also be a symptom of the turbo so am figuring the 5.0 would solve this.

Has anyone driven both and what were your observations?

've not driven a 2.3, but, have driven both the 5.0 and a 3.7 (in the US). Bearing in mind there is a difference between the US 3.7 spec and the UK spec there was still a world of difference between the two cars, the major one (apart from the performance) being the sound. The 5.0 felt good on the road, well-placed and easily controllable, whereas the 3.7 felt less planted and 'ordinary'.

The EU Mustang has been tuned for European roads, so a direct comparison with US cars is going to be difficult.
I found the US V6 very much improved over the previous model.

Is it not the case that 5.0 owners will smirk at EcoBoost owners for their small engines, while Ecoboost owners will smirk at 5.0 owners for their small wedding tackle?

Yes i've driven both and own a 2.3. I had my dealers GT whilst i had some initial issues with my car sorted out, had it for about 4 days.
The first thing that struck me after handing the GT back and getting straight into mine was how much lighter it is, instantly noticable. The front isn't bogged down by that big heavy V8 so the car reacts and turns a lot quicker. I'm not going to get into a V8 v's EB debate and i'm certainly not going to go down the "sound" route because thats been done to death.
The 2.3 is certainly a lot more progressive with its power and want to kill you, granted when i had the V8 it was wet & the Pirelli tyres aren't the best but that back end is quite twitchy. It's certainly easier to put the power down in the 2.3 without fear of putting it into a bush, despite what GT owners will say for me personally 310bhp is more than enough, put your foot down in 4th and you're at 80mph 4000rpm with plenty left before 6500rpm comes up (I need my license for my job though so fun time over)
As for your throttle response issue, stick it in Sport+ mode and the throttle response is instant, i find there's plenty of torque in the engine to carry it while the turbo spools up so never really notice any lag.
The V8 certainly seems to get reasonable MPG on a run, i've yet to see any V8 owner honestly say what their pure in town MPG is. Most capture little snapshots and say look its 31mpg when i reality they got into the car, reset the readings, drove 10 mile at 50mph then took a picture of the reading.
My absolute real world readings are 26mpg round the town (average speed reading was 23mph), that is pure heavily congested town traffic, sitting in 20 minute slow/stop traffic every morning. I've done one long run which resulted in 36mpg - hit 400 mile from the tank before i filled up.

Will do in due course. Good outline and a great point about the V8 mpg and I'll be having a good look at that.

The throttle response thing is interesting so guess the sales guy didn't get that far into showing me 'stuff'

I hope the ride in the V8 is more settled as here in oz the ride wasn't flash in the 2.3 and felt unsettled.
