VXR Monaro overheating!!!

Hi there, I have never been on a forum like this before so here goes.
6 weeks ago I was sitting in traffic and saw a couple of wisps on steam come out the from vent and a few minutes later saw the temp gauge go flying round towards red. Pulled up immediately and filled it with water and got it to the mecanic next door to my work . They pressure tested it and said the water pump was leaking and replaced it.
I then put around 250 miles on it and it happened again, luckily I noticed again. They then tested the oil with some sort of test and said there were exhaust gases in the oil so it must be the head gasket, which they then did, (skimmed but no crack test, why no test I don't know?)
I then put around 250 miles on it and it happened again, luckily I noticed again. They bought a purging tooling saying apparently the the LS2 engine doesn't bleed well.
I then put around 250 miles on it and it happened again, luckily I noticed again. So we conclude it is losing water and must be the head or the block.
I keep looking at the exhaust plumes but it has always been like this and one the other forums agrees that it is just something these engines give off.
I have noticed more condensation inside and steaming up but no one can see a leak and the carpet insn't wet.
Any ideas, I'm £2k in the hole already and no closer to dyagnosing the problem?
