...and now the "bite point" is comically high. It feels (and sounds) like I'm a learner driver again!

So, which nuts at which end of the cable do I adjust to get the pedal a bit nearer the floor?

the ones at the end of the cable furthest away from the pedal, i.e. on the clutch fork. Make sure to nip them up tight otherwise they can vibrate loose, leading to no clutch release...

Either end - just make sure you don't end up with too much or too little thread on either end.

Some day I'd love to hear the physics behind adjusting one end in preference over the other.

Thanks guys. I made sure that the nuts on the new cable were lined up with those on the old one, but I guess the old one must have been stretched a bit. I'll have a fiddle later.
