My car, R400, seems to lack the indition blip of the throttle, ie goes flat then picks up. If it were cars I would say the pump jet was wrong

On the MBE its called Transient Fueling and here are my settings:

Snap Throttle Fuel Map(TPS vs Speed) = all are set to 0
Accel Throttle Threshold = 2.01
Accel Fuel Map = all set to 50
Accel Fuel Decay = 188

According to the MBE instructions Snap Throttle sounds like the boy but mine is set to 0s

Finding it hard to get me head round the difference between Snap Thottle and Accel Fuel Map

Which do I need to adjust?

Without more info, new install/tuning, what does the ignition map say, etc, this is a bit of a guess

I would set the snap throttle to the same as the accel map and see what difference it makes. You'll likely need to increase all 3 numbers especially the decay. It's going to be hard without a wide band lambda
