Thinking of chopping in my 911 GT3 for a 7 + tow car

Probably been asked a thousand times but looking for some advice.
I use my Mk1 911 GT3 almost exclusively for track days as I do most of my road miles on my motorbike. I have had a Caterham before so I know roughly what I'd be getting in to & whilst no Ayrton Senna, I'm not too shabby on track.
I'd like to be able to run the car on slicks so I'd probably trailer it a fair bit but at the same time, I would like something with reasonable road manners - might even use it for the annual run down to Le Mans.
I reckon after buying a tow vehicle & trailer my budget would be about £25k. For that I'd need to buy the car + 2 spare sets of rims.
So what would be the best model / models to look at and what options are must have's / best avoided?

I drove Caterham Cars' R300 demo car at Brands the other week - very little road-orientated fare passed it in any of our hands and its full potential could be exploited very easily. It does lack the kick in the back that the old K Series R400/R500 have though and if you want that feeling, do take a look at K R400s and R500s.

Funny enough, I was considering selling my R500 to buy a GT3. PM if you are interested and let me know what sort of price you are looking for the GT3. R500 has all the choice extras and some rather expensive engine enhancements(done by Dave Andrews of DVA Power)to improve power/torque/reliability etc.
Why not have the best of both worlds and look for a Caterham Hayabusa (if you can find one).
Presently I have one now and I have also owned an R500, personal choice for me would be the Hayabusa every time it's just that bit more special. The sequential box is great and acts the same as your bike i.e. first couple of gears clunky but after that sublime. It is also roadworthy and is far easier to drive on public roads than the R500 ever was. Not sure of back to back performance over the R500 but if anything feels faster, probably because of gearbox and flatshifting.
Bought mine mainly for road use and as it's an ex race car it's a bit tatty but after visiting the ring for the first time last year I'm going to hold back on tarting it up and use it for what it was meant for.

to think, my old duratec car sold for 23k ! and it was mostly brand new !
you might pick up a custom duratce car for early 20's actually, better reliability
IMO make sure anything you get has dry sump and just my opinion but stick to an R300 or VHPD or a Duratec engine.
i'm also big on safety so would want a full cage with proper FIA padding, the side protection intrusion bar etc.., maybe even consider the gearbox chassis mod that the race cars have (something that isn't generally too well known about).

Absolutely loved it and became sold on the caterham Hayabusa from that point as the best compromise of a fast road/track caterham. I pipped Peter carmicheal's 250bhp k engined car for the class win on the day despite running hard compound circuit acb10 instead of the favoured soft A24 sprint versions.
I've since helped to build 2 more busa cat's for friends and would go this route if i buy another.

Thanks for that Dave the car is now fitted with a 1300 Busa engine as Mike blew the big one when the dry sump belt came off. The engine in the car now, came from a car TV programme(Sky's Men and Motors)of a guy building a kit car from scratch fitted with a motorbike engine, "unfortunately it shredded his chassis"
Car is used a lot on the road but after visiting the ring last year (I only live 70 miles away)it will now probably spend a lot of time on track.
