OK some questions!

I'm 6'2 - does this limit me to a long cockpit with bench seats and a tall FIA bar? How many Cats are long vs. short.

So much to learn so little time!

All dedion Caterhams are long cockpit.
The long cockpit was offered as an option on live axle cars starting in 1982 and if I'm not mistaken it became the standard in the early '90s

Don't forget you can get lowered floors too

I think they're standard now, and sorry I don't know when they became an option

Im a tad taller than 6'2" & bench seat defo the most room, but I find leather seats & pedals on furthest forward setting have been fine, tho a detachable steering wheel really helps when getting in/out.

Tho it all depends on how your height is made up- legs body etc, as I found the tillet seats made it a no go for me, just couldnt get comfortable enough to drive as seat needed to go back an inch or two at least, (tho its ok if a little tight on the passenger side) yet JeremyC who is pretty much the same height as me has no issues in his SLR.

Iguana - JeremyC's a lithe chappie isn't he - perhaps a little more lithe than you old son.... ;-)
