Rivnuts are the norm. Doesn't help when they spin however.
A racing tip is to reattach the wings with nylon bolts into the rivnuts to allow ran easier breaking away of the wing if it ever got knocked, hopefully protecting the side skins.
I think you can get serrated rivnuts which should bite into the alloy skin better and hopefully reduce potential spinning.

A good number of the rivnuts can be accessed inside the boot, secure them with a suitable clamp (eg. mole grips) and then unscrew the bolts from under the wing. For the others, unless you drill out the rivets on the interior quarter panels to gain access, you're probably going to need to grind the heads off the bolts ... but don't let anything get too hot. When the wings are off you should be able to tease out what's left of the bolts by gripping the flange of the rivnut.
You now need to beg/steel/borrow a rivnut tool and insert it in each to tighten up the rivnuts, or replace them if they're really bad. A little copperslip on the rivnut tool threads should help insert it without too much spinning. As mentioned re-fit the wings with Nylon bolts and use a little grease on the threads.
