K series overcooling ?

I have a situation where my 7, which is a 1.8 K series, (with a triple core radiator and 82 degree stat, new Stack temp gauge and sender) displays the following characteristics in cold weather.

It takes quite a while to warm up to temp, but once warm and moving around at low speed, the temp stays pretty static at 85ish, nice and warm and everything as you would expect. However, start driving at higher speeds on A roads where airflow is much greater, the water temp can drop down to well below 70 which I am then uncomfortable with in terms of engine being at full temp. This only really happens in cold weather.

Is this normal ? is there any problem with running the car hard when the temp has dropped like this (after it has already warmed up) ? Is it due to the rad or the stat, what can I do to stabilise it ?

Lots of questions, grateful for some thoughts.

Fit a hotter stat , apply a little tank tape to the rad or forget it sooner have it running slightly cooler than frying it!! MOP only

I have an 82 stat and have part of the grill covered at the moment which is helping.
