Straight-line performance is similar on paper: C5 Z06 has similar power to an LS2, less than an LS3, less torque than either, but it's a bit lighter. Interior quality of both C5 and C6 is fine, although some of the "touch points" on the C5 are a bit nasty - particularly the interior door releases, which must have cost about 0.001c to produce Equally, some bits of the C6 got better with time (e.g. the radio/console trim) but some got worse (e.g. losing lockable centre console lid).
And yes, all C5 Z06's are manual.
I can't help thinking your best bet is to try to attend a CCCUK branch meeting next time you're in the UK so you can see some cars up close and maybe get a ride in them. Choosing a Vette is a very personal thing, so relying on other people's opinions could be misleading and/or confusing!

The C5 Z06 was tested against a C6 Z51 and was faster round a circuit but not by a lot. Other factors are largely equal and there's not really much wrong with a C5 interior except the seats aren't very good (and prone to rock). The C6 is physically smaller which may be good but equally the bigger interior and luggage space on the C5 may be what you need. Looks are subjectve but to my eyes, the C5 looks stunning and the C6...well, doesn't. the C5 Z06 had a closer ratio box called the MN12 but it's still a long throw and really needs an aftermarket shifter.
The C5 interior is fine, but the seats let it down, and feel a little on the cheap side (they're manufactured by Lear, who I believe also make seats for BMW in the US). Apart from that, the C5 Z06 is a great proposition, but it depends what you're looking for. Put the two of them together though, and it's no contest as far as looks are concerned: the C5 Z06 wins by a light-year!
