Official EU C6 came with a ‘Mobil 1 0W40’ sticker on the driver’s door sill, despite reading 5W30 still on the engine oil cap.Given the choice I prefer a 0W40 as it’s generally a better performance oil. It is thinner when cold and so offers protection more quickly from when you turn the key - especially useful in engines such as these with a fairly large amount of oil to heat through. Then at higher temperatures (officially 100deg, which is where a lot of engines will run oil temps under normal driving conditions) it maintains a higher viscosity. This is less good for fuel economy (and power) due to higher windage losses and is one reason many manufacturers often opt for 30 weight rather than 40 in cars more likely to see the basic daily cycle. However if you use your engine enthusiastically, which owning an LS you should , then a 40 weight offers far better protection and maintains a higher pressure up in the higher operating temp ranges.
